Garlic Cheese Muffins

I combined several pinterest recipes to create these tonight. Both Jason and I loved them! They weren't healthy at all but the rest of our dinner was, so I didn't feel so bad. One thing I loved about this is that it only made 5 muffins - we never end up eating left over bread.



1 small can of buttermilk biscuits
3-4 cloves of garlic- diced
4 tablespoons butter
parsley flakes
1/4 cup Parmesan cheese
garlic salt to taste
handful of cheddar cheese - grated
2 tablespoons butter- melted
muffin tin

heat oven to 400 degrees
melt butter with garlic - slowly so the garlic flavors the butter. add in parsley, Parmesan, and garlic salt.
meanwhile, cut biscuits into 8ths and put into a bowl with cheddar
pour butter mixture over biscuits and quickly toss to coat evenly.

put about 7 pieces of biscuit in each muffin tin. there was some butter/cheese mixture left over - use that to top the muffins. 

melt the last 2 tablespoons of butter and evenly distribute the butter over the top of the muffins. I used a teaspoon and poured it in around the edges to sort of grease the pan.

bake for about 14 minutes


These were really delish and easy. Whenever we have Italian food, I will make these over regular garlic bread.

Pace's First Christmas (December in Austin)

We got to spend 3 weeks in Austin with my parents and saw lots of friends but sadly missed a few people too! I had so much fun getting to visit my favorite restaurants and just lounge around my parents house being thoroughly spoiled. Jason, Pace and I started the trip off with a drive to Kerrville to see our niece graduate from the LVN program at Schreiner. Then all three of us headed into Austin and met Santa for the very first time with a brunch at the Austin Club. Jason flew back to Midland to take of Chester and Ellie and well, you know, work.

While in Austin we made the trip down to Houston to see my brother being sworn in as a district judge. What a special day that was and Pace got meet his Ward cousins for the first time!

We basically moved into the Four Seasons.

Pace had a whole party thrown in his honor and he got to meet some very special people and generally was adored by everyone. Just ask Mimi - he is exceptional. Not that I am biased or anything!

Soooo loving all the attention!






After 2 weeks with out us, Jason survived and was able to fly back into Austin to join us for the Christmas festivities.
